What You'll Need

  • 1 cup white vinegar
  • 1 cup water
  • 3/4 cup sugar
  • 1 teaspoon salt
  • 8 cups peeled and thinly sliced Kirby or other cucumbers (about 3 pounds)

What to Do

  1. In a large bowl, combine the vinegar, water, sugar, and salt; mix well. Add the cucumbers and toss until well coated.

  2. Cover and chill for at least 2 hours, or overnight.

  3. This will keep in a sealed container in the refrigerator for several weeks.

I will also quarter small tomatoes and thinly slice bell peppers along with sliced onion when I make this. A good summertime treat.

These are wonderful! Been making them for years. Add thin sliced onions to it also (separate the rings). They pickle nicely.
