Who would've thought you could make a breakfast hash in the microwave? Our recipe for 3-Minute Breakfast Hash is a hearty breakfast idea that cooks up in a jiffy!

What You'll Need

  • 1/2 cup frozen potatoes O'Brien or shredded hash browns
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 egg
  • 1 tablespoon shredded Cheddar cheese
  • Ketchup or BBQ sauce (optional)

What to Do

  1. Coat 8-ounce microwave-safe ramekin or small cereal bowl with cooking spray. Add potatoes, salt, and pepper; mix well. Then, microwave on high 1 minute until hot. Break egg into bowl. Beat egg with fork until blended.
     
  2. Microwave on high 30 seconds; stir. Microwave until egg is almost set, about 15 to 30 seconds longer.
     
  3. Top with cheese. Serve with ketchup or BBQ sauce, if desired.

Notes

  • Don't overcook this. The scrambled eggs will continue to cook and firm up after they are removed from the microwave.
     
  • Microwave ovens vary. Cook time may need to be adjusted.

I liked this but due to my health I used 1/4c. of egg beater for the egg,Simply Potatoes which are not frozen,1/8th of a cup of bacon bits and left out the cheese, so good

Hate to sound dumb, but you don't have to thaw the hash browns? They will come out OK after 1 minute in the microwave?

No you dont have to thaw potatoes. They cook longer than 1 minute, 2 minutes to be exact.

My husband and I love this recipe. It is so quick and easy. He usually makes it every weekend. We like using eggbeaters and adding more bell pepper and onions or mushrooms or whatever you want. Thanks Mr. Food.

Well I think this sounds great, since I only have a microwave, no oven or range. But...wondering if you could make it in larger container,,,lookin for something to make for our once a month safety meeting, without having to borrow oven or range..hmmmmm????

You could spread out your hash browns in a 9 X 9 pan and heat till almost done then make however many 'wells' to pour your eggs into. You may need to adjust the timing since you are adding volume. Just a thought it might be easier to use Egg-beaters if you don't have a proper kitchen to work in.

To all those who are constantly asking what is calorie content you can figure it up by addressing the ingredients listed. The hashcrowns are 60 calories, an egg is 80 if a large size is used, an ounce of cheese is around 100 depending on variety. Nearly everything is nowadays labeled for calorie content or if not there are thousands of calorie count sites online. I am not singling anyone out but for every recipe on here there are entries asking how many calories it contains. It is not rocket science to figure it out.

I think it be better if you put some cooked Jimmy Deans Hot Sausage it about a Tablespoon then mix together.
