Cheesy Baked Fish

Always looking for a new way to jazz up fish? Well Cheesy Baked Fish is a tasty twist that adds homey comfort to mellow as can be catfish.

Serves: 6

Cooking Time: 20 min

Ingredients
  • 6 catfish fillets, fresh or frozen
  • 1 cup finely crushed cheese crackers
  • 1/4 cup sesame seed
  • 1 tablespoon chopped fresh parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 1/2 cup (1 stick) butter or margarine, melted
  • grated Parmesan cheese (optional)
Instructions
  1. Thaw fish fillets if frozen. Preheat oven to 400 °F.

  2. In a shallow bowl, combine cracker crumbs, sesame seed, parsley, salt and black and cayenne peppers.

  3. Dip fish fillets in melted butter, and then roll fillets in cracker-crumb mixture. Place fillets in a single layer in a baking dish that has been coated with nonstick vegetable spray and bake for 15 to 20 minutes, until golden. Serve topped with Parmesan cheese, if desired.
