Oven-"Fried" Fish

So crispy and crunchy, they'll swear it's fried and then they'll swear it's delicious - which, of course, it is!

What You'll Need

  • 2 pounds cod or haddock fillets
  • 1 egg, beaten
  • 1 tablespoon vegetable oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dried dillweed
  • 1/4 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • 1 cup fine cornflake crumbs

What to Do

  1. Preheat oven to 400 degrees F. Coat a baking pan with cooking spray. Cut each fillet into 3-inch-wide pieces.
     
  2. In a shallow dish, combine egg, oil, salt, pepper, dill-weed, paprika, and garlic powder. Place cornflake crumbs in a separate shallow dish.
     
  3. Dip fish pieces into egg mixture, then in cornflakes. Place on prepared baking pan and bake 20 to 25 minutes, or until fish flakes easily with a fork.
