Cooking Time: 20 min

What You'll Need:
  • 3/4 cup freshly grated Parmesan cheese
  • 1/2 cup butter, softened
  • 3 tablespoons mayonnaise
  • 2 green onions, chopped
  • 6 (8-ounce) grouper or other mild whitefish fillets (1-inch thick)
  • 1/4 cup lemon juice
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
What To Do:
  1. Preheat the broiler. Combine first 4 ingredients in a small bowl. Place fish on a lightly greased rack in a broiler pan. Drizzle with lemon juice; sprinkle with salt and pepper. Broil 5-1/2 inches from heat 15 minutes or until fish flakes easily with a fork.

  2. Spread cheese mixture on fish. Broil 4 to 5 more minutes or until lightly browned and bubbly.

Notes

If you can't find grouper or would rather use another fish, try one of these white-flesh alternatives: sea bass, orange roughy, or mahi mahi.
