Tomato Cream Crusted Fish

Try this Tomato Cream-Crusted Fish for a change of pace from the ordinary baked-on toppings. It's truly the cream of the crop!

What You'll Need

  • 1 (3-ounce) package cream cheese, softened
  • 2 tablespoons tomato paste
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 2 pounds fresh or frozen white-fleshed fish fillets, like cod, haddock, or whiting, thawed if frozen

What to Do

  1. Preheat the oven to 350 degree F. In a small bowl, combine all the ingredients except the fish; mix well.

  2. Place the fish on a rimmed baking sheet that has been coated with nonstick cooking spray.

  3. Spread the cream cheese mixture evenly over the top of the fish and bake for 18 to 20 minutes, or until the fish flakes easily with a fork.

Notes

For more cheese flavor, add 1 to 2 tablespoons grated Parmesan cheese to the cream cheese mixture.
