Tropical Red Snapper

Red snapper or any mild fish fillets will be jazzed up after marinating and cooking with this combination of tropical flavors. Take a trip to the tropics tonight with this light, fresh fish dish!

Serves: 4

Ingredients
  • 1/2 cup fresh lime juice
  • 2 scallions, thinly sliced
  • 4 garlic cloves, minced and divided
  • 2 teaspoons salt, divided
  • 1 teaspoon black pepper, divided
  • 4 (5-ounce) red snapper or other white-fleshed fish fillets
  • 6 tablespoons butter, divided
  • 1 large onion, chopped
  • 1 green bell pepper, chopped
  • 6 plum tomatoes, chopped
  • 1/2 cup all-purpose flour
Instructions
  1. In a 9" x 13" glass baking dish, combine lime juice, scallions, half the minced garlic, 1 teaspoon salt, and 1/2 teaspoon black pepper; mix well.
     
  2. Place fish fillets in mixture, cover, and marinate in refrigerator 1 hour.
     
  3. In a large skillet, melt 2 tablespoons butter over medium-high heat and saute onion, bell pepper, and remaining 2 garlic cloves 5 minutes.
     
  4. Add plum tomatoes, remaining 1 teaspoon salt and 1/2 teaspoon black pepper. Simmer 15 minutes, or until tomatoes have broken down.
     
  5. Meanwhile, place flour in a shallow dish and coat fish fillets on both sides, discarding marinade. In another large skillet, melt remaining 4 tablespoons butter over medium heat and saute fish 4 to 5 minutes per side, or until it flakes easily with a fork.
     
  6. Place fish on a platter and spoon tomato mixture over fillets.
