Zest is the colored outer skin of citrus, and it's packed with flavor. You can remove the zest by using a sharp knife or vegetable peeler and scraping strips off a lemon, lime, or orange. You can also use a cheese grater to scrape off fine pieces of zest. There's even a kitchen gadget called a zester that's made especially for this purpose!
