Most of us are familiar with the rich, slightly sweet biscuit that's known as all-American shortcake. It's usually split in half then filled and topped with sliced strawberries and dollops of whipped cream. It's been a favorite since the early nineteenth century when Washington Irving popularized shortcakes in his classic tale "The Legend of Sleepy Hollow."


Not long after, strawberries became the rage in lots of desserts. And over the centuries, versions of shortcake have taken another path. There have been "shortcakes" made with angel food cake and pound cake instead of biscuits, and yes, even popular refrigerator biscuits have been used as shortcake shortcuts.


Of course, the traditional version is still one made with that slightly sweet homemade biscuit, but shortcake can wear a lot of hats because we can also turn it into a main dish. Try topping biscuits with chunks of cooked chicken, savory gravy or cream soup, and cooked veggies. Talk about a quick and easy main dish!


Use your imagination and your leftovers for dishes your gang will love, because the bottom line is that shortcake wears a lot of hats, and every one is long on..."OOH IT'S SO GOOD!!"
