Caramel Ice Cream Balls

Just because the temperature outside is chillier than our freezer in the winter, that's no reason not to make up a batch of novelty ice cream balls, is it? We don't think we can wait until spring for these!

Serves: 8

Preparation Time: 1 hr 5 min

Ingredients
  • 1 quart chocolate ice cream
  • 1 1/2 cups crushed sugar wafer cookies
  • 1 cup caramel sauce, warmed
Instructions
  1. Line a rimmed baking sheet with waxed paper. Divide ice cream into 8 equal rounded scoops and place on baking sheet. Freeze for at least 1 hour, or until firm.
     
  2. Roll ice cream balls in crushed cookies, coating completely. Place in individual dessert bowls and drizzle each with caramel sauce. Serve immediately.
Notes

If not serving immediately, after rolling the ice cream balls in the crushed cookies, return them to the baking sheet, cover, and freeze until ready to serve. When ready to serve, place them in serving bowls and drizzle with the caramel sauce.
