Curried Fruit

Hand me my sunglasses 'cause this fruit is bursting with bright color...and taste. It's the best go-along for poultry of any kind!

Serves: 9

Cooking Time: 1 hr 5 min

What You'll Need:
  • 1 cup firmly-packed light brown sugar
  • 1/2 cup (1 stick) butter
  • 1 tablespoon curry powder
  • 2 (15-ounce) cans pear halves, drained
  • 1 (29-ounce) can peach halves, drained
  • 1 (20-ounce) can pineapple slices, drained
  • 1 (15-ounce) can apricot halves, drained
  • 1 (6-ounce) jar maraschino cherries, drained
What To Do:
  1. Preheat the oven to 325 degree F. In a medium-sized saucepan, combine the brown sugar, butter, and curry powder over medium heat until the butter is melted and the sugar is dissolved, stirring constantly.

  2. In a 9" x 13" baking dish, combine the remaining ingredients; mix well.

  3. Pour the brown sugar mixture over the fruit and bake for 55 to 60 minutes, or until hot and bubbly. Serve immediately.

Notes

Either cold or slightly warm, leftovers make a great ice cream topping!
