Blender Caesar Salad Dressing

You don't have to go to a restaurant to get a great Caesar salad. Keep adding and subtracting ingredients to our Blender Caesar Salad Dressing until you get it just the way you like it.

Serves: 4

Cooking Time: 5 min

What You'll Need:
  • 2 heads romaine lettuce
  • 1 to 2 garlic cloves
  • 2/3 cup olive oil
  • 2 tablespoons wine vinegar (red or white)
  • 2 tablespoons fresh lemon juice
  • 2 (2-minute) boiled eggs
  • 1 (2-ounce) cans anchovy fillets
  • 1 1/2 to 2 tablespoons grated Parmesan cheese
  • 1/4 teaspoon pepper
  • 4 tablespoons croutons (optional)
What To Do:
  1. In a blender jar, blend garlic, olive oil, vinegar, lemon juice, eggs, and anchovy fillets until well mixed. Transfer dressing to a large salad bowl.
     
  2. In cold water, rinse clean the romaine lettuce; dry well, and tear into bite-sized pieces. Add lettuce to salad bowl.
     
  3. Sprinkle with the Parmesan cheese, black pepper, and croutons, if desired. Toss well.

     
Note

Be sure to store in the refrigerator until ready to use. Refrigerate leftovers.
