Blender Caesar Salad Dressing
You don't have to go to a restaurant to get a great Caesar salad. Keep adding and subtracting ingredients to our Blender Caesar Salad Dressing until you get it just the way you like it.
What You'll Need:
2 heads romaine lettuce
1 to 2 garlic cloves
cup olive oil
2 tablespoons wine vinegar (red or white)
2 tablespoons fresh lemon juice
2 (2-minute) boiled eggs
1 (2-ounce) cans anchovy fillets
to 2 tablespoons grated Parmesan cheese
4 tablespoons croutons (optional)
What To Do:
- In a blender jar, blend garlic, olive oil, vinegar, lemon juice, eggs, and anchovy fillets until well mixed. Transfer dressing to a large salad bowl.
- In cold water, rinse clean the romaine lettuce; dry well, and tear into bite-sized pieces. Add lettuce to salad bowl.
- Sprinkle with the Parmesan cheese, black pepper, and croutons, if desired. Toss well.
Be sure to store in the refrigerator until ready to use. Refrigerate leftovers.
