Roasted Onion Salad

When onions are cooked long enough to brown, they caramelize as a result of the natural sugar that's in 'em. It's a magical process that adds rich flavor to this salad.
What You'll Need:
5 medium onions, peeled and cut into 1/2-inch think slices
cup olive oil
8 cups gourmet mixed salad greens
cup chopped walnuts, toasted
1 (4-ounce) package crumbled blue cheese
prepared garlic vinaigrette
What To Do:
- Preheat the oven to 450 degrees. Arrange onion slices in a lightly greased roasting pan. Drizzle evenly with olive oil.
- Bake at 450 degrees for 12 to 15 minutes or until onion slices are lightly roasted. Cool 5 minutes.
- Combine salad greens, walnuts, and blue cheese; toss gently. Top with onions, and drizzle with garlic vinaigrette.
