Garlicky Mustard Lamb Chops

Garlic and mustard... bam... burst of flavor! You'll be amazed how much the garlicky mustard rub really enhances the flavor of the lamb chops.

Serves: 4

Preparation Time: 7 min

Cooking Time: 14 min

What You'll Need:
  • 2 cloves, garlic, minced
  • 1/2 teaspoon pepper
  • 1/4 teaspoon dried thyme
  • 1/8 teaspoon salt
  • 2 teaspoons lemon juice
  • 2 teaspoons Dijon mustard
  • 1 teaspoon olive oil
  • 4 (5-ounce) lean lamb loin chops
What To Do:
  1. Preheat the broiler. Combine garlic, pepper, thyme, and salt in a small bowl; mash with back of a spoon until mixture forms a paste. Stir in lemon juice, mustard, and olive oil.

  2. Trim fat from lamb chops. Spread garlic mixture over both sides of chops. Place chops on a lightly greased rack in a broiler pan. Broil 6 to 7 minutes on each side or to desired degree of doneness.

Notes

This rub will enhance pork chops just as well. Substitute 4 (5-ounce) pork chops for the lamb, if desired.
