Farmer's Skillet Breakfast

Okay, you've only got a half-hour before you drive carpool, better known as Mom's Taxi Service. So grab a skillet and, in no time, you'll have a diner breakfast of eggs and potatoes that's guaranteed to get them going.

What You'll Need:
  • 1/2 cup (1 stick) butter
  • 1 bell pepper (or 1/2 red and 1/2 green), diced
  • 1 small onion, chopped
  • 1 pound frozen hash brown potatoes
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 6 eggs
What To Do:
  1. In a large skillet, melt butter over high heat. Add bell pepper and onion, and saute for 2 minutes. Add hash brown potatoes, salt, and black pepper, and stir until well combined.
  2. Cook 10 to 12 minutes, or until golden, stirring frequently. Reduce heat to medium.
  3. Using a spoon, make 6 evenly-spaced indentations about 1/2 inch deep in mixture. Crack eggs one at a time and place each in an indentation.
  4. Cover skillet and cook 7 to 9 minutes, or until eggs are set and cooked as desired. Serve immediately.

Add a splash of salsa or hot pepper sauce to these home fries for extra zing.

First off, I'd like to say that healthy for you or not, I love a lot of the Mr. Food recipes and use them often. I don't know if it is an April Fool's Day thing, or not, but there are some things that don't add up with this recipe. First it says that you have 30 min. to prepare and eat this meal and still get to carpool on time. If you add up the maximum prep and cooking times, which I think you would need--you better eat really fast!! Next it calls for 6 eggs, and there are only 5 in the photo!! Was this a test, prank or just human error? Either way, it sounds delicious and I think that we'll try it on Easter morning when we can sit down and really enjoy it without any time constraints.

It was sooooo good the photographer couldn't wait and ate one of the eggs! Try it and you'll see why!

I have made one similar to this and it turned out delicious and oh so yummy thanks for showing this recipe with everyone !!! Thank You For a Different Way To Make Hash Browns I love to make my own hash browns and cutting up all of the ingredients myself it's much better and very delicious that way I also topped it off with cream cheese and this was for Pastor appreciation day and I didn't have any left it was very Delicious and scrumptious 3 O) 3

I had made this using Potatoes O'Brien rather than using plain hash brown potatoes and cutting up the onion and bell pepper myself. Worked perfectly.

Hi there. I have made this yummy breakfast before. Sometimes I scramble the egg right in with the hash brwns potatoes and add a little of your favorite cheese shredded up on top of the potatoes. Yumm

Can u use Tater Tots that are frozen??

Hello! We don't recommend using Tater Tots in this recipe, since Tater Tots tend to be bigger and chunkier, so they won't stay together or form the wells you need in order to hold the egg.

Dear Mr. Food & followers, I am a pre-diabetic, which means I have to watch my sugar as well as fat. This recipe could easily be adapted to diabetic's needs. especially if you use a Non-stick skillet. That would eliminate the 1/2 stick of butter. Here's how I would use this recipe: 1 teaspoon of butter 1 cup Seasonings (this available in the frozen vegetable aisle-it is onions, green & red bell peppers already diced) Leave out the hash browns Salt & pepper to taste 6 1/4 cup Eggbeaters or egg substitute (if U want low-fat) The directions would be the same, except for adding hash browns. A note on "Seasonings", it is a bag of frozen onions, green & red bell peppers (but mostly onions). This can be a valuable shortcut for busy people as well as diabetes. Many of us have trouble standing for very long and chopping veggies. I buy a big bag of these monthly because the mixture can go in casseroles or soups. Its just very versatile and very fast & easy. dak

Hello!! ;-) I too am a diabetic- I take 5 shots of insulin per day, so I can certainly relate. I love recipes like this, and I usually can adjust each one to my tastes/diet. However, is there anything that you could recommend in place of the hashbrown potatoes? I don't usually eat potatoes at all, because of the high amounts of carbohydrates. I am on a low carb diet basicly, but I love this recipe. Any suggestions???

The only additions I did was that I had several baked potatoes in the fridge so I grated them up and used them instead of frozen. I fried one slice of applewood bacon crisp to add extra flavor. Added just a little more cooking oil and cooked hash browns with onion, bell pepper and bacon in the drippings. Was very flavorful and we enjoyed it. NOTE: Make sure you serve right away if you like over easy style eggs as they continue to cook in the pan and will be too hard.
