Apricot Macadamia Snowballs

Preparation Time: 10 min

What You'll Need:
  • 6 ounces dried apricots
  • 1 cup macadamia nuts
  • 1/4 cup apricot jam
  • 1/2 cup flaked coconut
  • 1 tablespoon sugar
What To Do:
  1. In a food processor, blend the apricots, jam, sugar, and nuts, pulsing the motor until the mixture forms a mass.

  2. Form rounded teaspoonfuls of the mixture into 1 inch balls; roll each ball in the coconut until well coated. Refrigerate for 1 hour.

    Makes 2 dozen.
Notes

If you prefer a nuttier flavor, you can toast the coconut before using it. Just spread it out on a cookie sheet and place the sheet in a 300 degree F. oven for about 5 minutes, or until lightly browned.
