Blueberry Lime Mold

Tangy lime flavor and crunchy fresh blueberries? What could be more refreshing and colorful?

What You'll Need

  • 1 (4-serving size) package lime-flavored gelatin
  • 1 tablespoon sugar
  • 2 tablespoons lime juice
  • 1 1/2 cup boiling water
  • 1 (8 ounce) container frozen whipped topping, thawed
  • 1 pint fresh blueberries (see Note)

What to Do

  1. In a medium-sized bowl, combine gelatin, sugar, lime juice, and boiling water, stirring until gelatin and sugar are dissolved. Chill about 1 hour, or until slightly thickened.
     
  2. With an electric beater on high speed, beat gelatin until light-colored and doubled in volume. Beat in whipped topping, then gently fold in blueberries. Pour into a 4- to 5-cup gelatin mold. Cover and chill 3 to 4 hours, or until firm.
     
  3. Dip mold in warm water and unmold onto a large serving platter.

Notes

Frozen blueberries can also be used, but be sure to drain them really well.
