Champagne Dessert Cocktails

You'll be the toast of the town when you ring in the new year with this "adults only" version of our old friend, gelatin. Our Champagne Dessert Cocktails are a novel way to celebrate any occasion.

Serves: 8

Preparation Time: 10 min

Chilling Time: 2 hr 40 min

Cooking Time: 5 min

What You'll Need:
  • 2 (4 servings each) packages lemon-flavored gelatin
  • 2 cups boiling water
  • 2 cups champagne
  • 8 strawberries, hulled
What To Do:
  1. In a large bowl, dissolve gelatin in the boiling water; let cool for 10 minutes. Add champagne and chill 40 to 45 minutes, until slightly thickened. Reserve 1 cup of gelatin mixture and spoon remaining gelatin mixture evenly into 8 champagne flutes or parfait glasses. Place 1 strawberry in each glass.
     
  2. In a small bowl, with an electric mixer on high speed, beat reserved cup of gelatin mixture until fluffy and doubled in volume. Spoon equally into glasses, cover and chill for at least 2 hours, until firm.
Notes

This is a perfect way to enjoy leftover champagne. It's also good for those times when you want to serve a sparkling dessert.
