Floating Swedish Crème

Most people think that all Old World foods are hearty and heavy. Not true! This recipe is as Old World and as light as can be!

Serves: 4

Preparation Time: 2 hr 10 min

What You'll Need:
  • 1 pint half-and-half
  • 1 envelope (1/4 ounce) unflavored gelatin
  • 3/4 cup sugar
  • 1 pint sour cream
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1 can (16 ounces) sliced peaches, drained
What To Do:
  1. In a small saucepan, over low heat, heat the half and half, gelatin, and sugar, stirring constantly for 8 to 10 minutes, until all the sugar is dissolved. Do not allow to boil.

  2. Remove from the heat and cool for 5 minutes. With a wire whisk, beat in the sour cream, and vanilla and almond extracts.

  3. Pour into a 9" glass pie plate and chill for 2 to 3 hours.

  4. Top with the sliced peaches.

Notes

This is great as is, or you might want to top it with any kind of fresh fruit that's in season.
