Easy, refreshing, and full of Florida sunshine.

Serves: 8

Chilling Time: 4 hr

What You'll Need:
  • 15 vanilla wafers
  • 1 (14 ounce) can sweetened condensed milk
  • 1/2 cup lemon juice
  • 1 (8 ounce) container frozen whipped topping, thawed
What To Do:
  1. Line bottom and sides of an 8- x 4- inch loaf pan with aluminum foil, extending foil 1" over edges of pan.

  2. Arrange vanilla wafers, top side down, on bottom of pan, overlapping to fit bottom. In a large bowl, combine sweetened condensed milk and lemon juice. Fold in whipped topping, then place mixture over vanilla wafers.

  3. Cover and freeze 4 hours or until firm. Invert onto a serving plate and peel off foil. If necessary, let stand 10 minutes before slicing and serving. Store leftover loaf in the freezer.
