Individual Raspberry Trifles

Dust off your martini glasses, but hold the ice! The shapely beverage glasses beautifully display this easy-yet-elegant dessert. If you don't have any martini glasses, just use a similar size glass or dessert dish.

Serves: 4

Preparation Time: 12 min

What You'll Need:
  • 1 (3.9-ounce) package vanilla instant pudding mix
  • 2 cups fresh raspberries or 2 cups individually frozen unsweetened raspberries, thawed and drained
  • 1/2 cup seedless raspberry jam
  • 1/2 (10.75-ounce) pound cake, cut into ½-inch cubes
  • 1/2 cup whipping cream
  • 1 tablespoon sugar
What To Do:
  1. Prepare pudding according to package directions.

  2. Stir together raspberries and jam. Spoon 1/4 cup raspberry mixture equally into 4 martini glasses (see headnote).

  3. Top with 1/4 cup pudding and then equal amounts of pound cake. Spoon remaining raspberry mixture over cake; top with remaining pudding. Chill, if desired.

  4. Beat whipping cream and sugar at high speed of an electric beater until soft peaks form. Dollop on trifles.
