Black Bean Salad

If you want to try something new and yummy, this one is for you. Black beans are really "in" right now, so come on and be a trendsetter.

Serves: 6

Preparation Time: 20 min

Ingredients
  • 1 head of iceberg lettuce, shredded (8 cups)
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 red bell pepper, chopped (about 3/4 cup)
  • 1 small onion, chopped (about ½ cup)
  • 1/3 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon garlic powder
  • 2 tablespoons chopped fresh parsley
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
Instructions
  1. In a large bowl, combine all of ingredients; mix well.
     
  2. Serve immediately or cover and chill until ready to use.
