So thick and creamy delicious that it can be a salad, a spread, a sandwich filling. You name it...it's "eggs-actly" perfect!

What You'll Need

  • 1 tablespoon butter
  • 1/2 cup mayonnaise
  • 1 (15-ounce) can peas, drained
  • 3 hard-boiled eggs, finely chopped
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

What to Do

  1. In a small saucepan, melt butter over medium-low heat. Add mayonnaise and peas and toss quickly to coat; remove from heat.
     
  2. Transfer to a medium-sized bowl and add remaining ingredients; mix until well combined. Cover and chill at least 2 hours before serving.

I think using frozen peas are better to use. They are not has mushy. They hold up better during the cooking method.

I like chopped onion and celery in my pea salad along with the ingredients in this recipe.

Here's a recipe for Pea Salad that has been in my family since the 1940's and it is the best I have ever tasted. Pea Salad 2 cans GREEN PEAS, drained 3 hard boiled EGGS, chopped ONION, chopped 1 small jar PIMIENTOS, diced 4-5 slices CHEESE, chopped or shredded (about cup) SALT & PEPPER to taste Mix enough MAYONNAISE or SALAD DRESSING to moisten (usually 2 Tablespoons)
