Pineapple Carrot Slaw

This chilly salad is sure to beat the summer heat. Its mix of fruit and carrots is a little different, but one taste and you'll be convinced that it's a match made in heaven.

Serves: 6

Chilling Time: 1 hr

What You'll Need:
  • 6 cups shredded carrots (about 1-1/2 pounds total)
  • 1 (8 ounce) can crushed pineapple, drained
  • 1 (8 ounce) container lemon-flavored yogurt
  • 1 tablespoon honey
What To Do:
  1. In a large bowl, combine all ingredients; mix well.
     
  2. Cover and chill at least 1 hour before serving.
     
Notes

This also makes a great lunchtime treat for packing in the kids' lunch boxes.
