Spring Pea Salad

Whether you eat your peas with a fork or a spoon, our Spring Pea Salad is deliciously light and is the perfect go-along for any lunch or dinner -- no matter how you eat it!

What You'll Need

  • 1 (16-ounce) package frozen peas, thawed
  • 5 slices bacon, cooked crisp and crumbled
  • 1/4 cup chopped red onion
  • 2 tablespoons chopped fresh parsley
  • 4 ounces Greek feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 3/4 teaspoon salt
  • 1/4 teaspoon black pepper

What to Do

  1. In a large bowl, combine peas, bacon, onion, parsley, and cheese; set aside.
  2. In a small bowl, whisk together olive oil, lemon juice, oregano, garlic, salt, and pepper. Pour mixture over peas and toss gently. Serve immediately or cover and refrigerate until ready to serve.

I thought it was too salty. The next time I make it, I will only use 1/4 tsp. of salt vs. 3/4 tsp. For some reason my grocery store did not have crumbled Feta cheese, although they usually always do, so I substituted Gorgonzola.

Perhaps the Gorgonzola made it more salty so maybe a better option would be not to add any salt to the recipe and then when eating, salt to taste. I initially gave this recipe only 3 stars but I should have given it 4.

I need to take a dish to Church on Wed night. I was wondering if I could substitute some of the ingredients. I only have Swiss, Cheddar, and Pepperjack cheese, not feta. I also have some carrots, and a red pepper. I also have eggs that I could boil and use. Does anyone have any comments?

Although all of the ingredients you have sound delicious, I don't know how they would work in this recipe. You can certainly try, but since we haven't tested it this way, we can not guarantee the results. Let us know!

If you are going to make that many changes to the recipe, why don't you just ignore it altogether and start from scratch with your own.

Would taste great either way!! I would use a fork! :)

Harold, I vote for the spoon! Peas have a tendency to roll right off ny fork! I'm going to the store to get the ingredients for this salad this afternoon!

Well, I did make this dish that afternoon. I liked it very much, my husband didn't like the feta cheese, though. I think the next time I make it, I will substitute feta with Gorgonzola or some other cheese that is more to his liking.

Oh, BTW, I only added 1/2 tsp. of salt by mistake, but it was just fine!
