Tuscan Bread Salad

Tuscany is famous for lots of things, including its classic bread salad. Well, now we can make it at home, too, using fresh tomatoes, cucumbers, and onions -- in just minutes!

Serves: 4

Ingredients
  • 10 medium-sized ripe plum tomatoes, cut into wedges
  • 3 medium-sized cucumbers, peeled and thinly sliced
  • 1/2 of a red onion, thinly sliced
  • 1 box (5½ ounces) seasoned croutons (see Note)
  • 1/2 cup olive oil
  • 1/4 cup balsamic vinegar
  • 1/2 teaspoon sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
Instructions
  1. In a large bowl, combine the tomatoes, cucumbers, onion, and croutons. In a small bowl, whisk together the olive oil, vinegar, sugar, salt, and pepper; pour over the vegetables and croutons.

  2. Toss and serve immediately.


Notes

There are so many different ways to flavor this, simply by changing crouton flavors. Sometimes I use herb-seasoned ones, other times I feel like going with the garlic ones. Try those or whichever ones are your favorites.
