Bed and Breakfast Blueberry Pancakes

Sunday mornings are made for reading the newspaper and for lazy breakfasts that make us feel special. This blueberry pancake recipe, inspired by many of our country's coziest bed and breakfasts, is sure to be a rise-and-shine favorite!

What You'll Need:
  • 3 eggs, well beaten
  • 2 cups milk
  • 3 tablespoons vegetable oil
  • 3 cups all-purpose flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons sugar
  • 1 cup fresh or frozen blueberries
What To Do:
  1. In a medium bowl, combine eggs, milk, and oil. In a large bowl, combine remaining ingredients except blueberries; add egg mixture and mix thoroughly with a wooden spoon until smooth. Gently stir in blueberries.
     
  2. Coat a skillet or griddle with cooking spray, then heat over medium heat. For each pancake, pour 1/3 cup batter onto skillet. When bubbles form and edges begin to brown, flip pancakes and brown on other side. Serve immediately.

Simple and Good - I agree with Chrismarr. Bruce, Make it your way, but I'll say with Mr Food!

Everyone is allowed to adjust recipes however they want, you don't have to follow it exactly. That being said, stop being so critical...it's a good recipe and simple to follow, which is why I like Mr Food. Good recipes and you don't have to be rich, or extremely skilled to make it turn out the way that it should. Thank you Mr Food!

In all honesty, I'd say the "recipe" is pretty generic -- used for generations across America. I grew up on our NE Iowa dairy farm with nearly the same ingredients, less the sugar. And yes, they were/are good -- don't recall there being "left overs" very often! :-) Actually, that recipe was/is essentially our waffle recipe. NOW, "if" you'd change the recipe only slightly... I think you can then truly say "OOH IT'S SO GOOD!" The change? . . . simply use BUTTERMILK in place of the whole milk! FYI, our "Buttermilk Pancakes" recipe -- handed down for generations: 4 Cups Buttermilk, 2 1/2 tsp Baking Soda, 1 tsp Salt, 2-3 Eggs (depending on size*), 1 T Vegetable oil, 2 1/2 Cups sifted flour (sift/add to all the other ingredients, which are already mixed) Do NOT over beat. (*Our chickens didn't sort their eggs by size -- Small, Lg, XLg! lol) I think you'll find them lighter... and melt in your mouth good! BTW... "lazy" breakfast Sunday morning -- what's that? Never heard of that -- as it was quite a rush on Sundays to get the milking equipment cleaned up, the cows out to pasture AND ourselves "cleaned up" to get into town for church.
