Make diner-worthy pancakes at home with Stack-'Em-Up Pancakes. They're a fast and tasty breakfast. Get your maple syrup and a pat of butter ready because you're going to be flying through these recipes two at a time! This easy pancake recipe will start off your morning on an extra tasty note.

What You'll Need:
  • 2 cups biscuit baking mix
  • 1 cup club soda
  • 2 eggs
  • 1 teaspoon sugar
  • 2 tablespoons vegetable shortening plus more as needed
What To Do:
  1. In a large bowl, combine biscuit baking mix, club soda, eggs, and sugar; mix well. 
     
  2. On a nonstick griddle or in a large skillet, melt 1 tablespoon shortening over medium heat. Pour 1/4 cup batter per pancake onto griddle and cook each batch of pancakes about 2 minutes, or until bubbles appear on top. Flip pancakes and cook an additional 1 to 2 minutes, or until golden on both sides, adding more shortening as needed. Serve immediately, or keep warm in a low oven until all pancakes are cooked.
