Fresh Tomato Sauce

There's been a lot of talk about 'The Mediterranean Diet' of veggies and oils, and you can move toward healthier fats like olive oil with this tasty Mediterranean dish. Fresh Tomato Sauce makes a great topper for everything from pasta to polenta.

Serves: 6

Cooking Time: 15 min

What You'll Need:
  • 1 pound spaghetti
  • 1/4 cup extra virgin olive oil
  • 4 garlic cloves, minced
  • 8 plum tomatoes, coarsely chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup chopped fresh basil
  • 1 tablespoon grated Parmesan cheese
What To Do:
  1. Cook the spaghetti according to the package directions; drain.
     
  2. Meanwhile, in a large saucepan, heat the olive oil and garlic over medium-high heat until garlic starts to sizzle. Stir in the tomatoes, salt and pepper and continue cooking over medium-low heat for 8 to 10 minutes.
     
  3. Place the cooked pasta back in the pot, toss with the tomato sauce and fresh basil. Place on serving platter and sprinkle with Parmesan cheese.
