Parsley Pesto Sauce

No fresh basil? No problem, 'cause pesto made with parsley gives a nice refreshing taste to this sauce that's already so darned versatile.
What You'll Need:
- 2 cups lightly-packed fresh parsley leaves
- 1 cup olive oil
- 1 cup grated Parmesan cheese
- 2 garlic cloves
- 1/2 cup walnuts
- 1/2 teaspoon salt
What To Do:
- Combine all the ingredients in a blender or a food processor that has been fitted with its metal cutting blade; blend until smooth.
- Store in the refrigerator, covered, until ready to use as desired.
Makes about 1-1/2 cups.
For a nice change of pace, we can toss this with about 1 pound of our favorite pasta.
