Parsley Pesto Sauce

No fresh basil? No problem, 'cause pesto made with parsley gives a nice refreshing taste to this sauce that's already so darned versatile.

What You'll Need:
  • 2 cups lightly-packed fresh parsley leaves
  • 1 cup olive oil
  • 1 cup grated Parmesan cheese
  • 2 garlic cloves
  • 1/2 cup walnuts
  • 1/2 teaspoon salt
What To Do:
  1. Combine all the ingredients in a blender or a food processor that has been fitted with its metal cutting blade; blend until smooth.

  2. Store in the refrigerator, covered, until ready to use as desired.

    Makes about 1-1/2 cups.

Notes

For a nice change of pace, we can toss this with about 1 pound of our favorite pasta.
