Chicken Caesar Pasta

You know those dishes that are immediate smile inducers? Well, we've got one for ya right here. This Chicken Caesar Pasta is tummy-rubbin', belt-unbuckling good. Try it and you'll see what we mean!

Serves: 2

Preparation Time: 4 min

Cooking Time: 9 min

What You'll Need:
  • 1 (8-ounce) bottle Caesar dressing, divided
  • 2 skinned and boned chicken breast halves, thinly sliced
  • 2 green onions, thinly sliced
  • 1 (10-ounce) package frozen sugar snap peas
  • 1 carrot, peeled and thinly sliced (see Note)
  • 1 cup torn fresh spinach
  • 8 ounces bow tie pasta, cooked
What To Do:
  1. Heat 3 tablespoons Caesar dressing in a large skillet over medium-high heat. Add chicken, and saute 4 to 5 minutes or until almost done.
     
  2. Add green onions, peas, and carrot; cook 4 to 5 minutes or until carrot is crisp-tender, stirring occasionally.
     
  3. Add spinach; cook 1 to 2 minutes or until wilted, stirring occasionally. Toss with pasta, and serve with remaining Caesar dressing.
     
Notes

Shredded carrots are readily available prepackaged in the produce department of your supermarket. Feel free to substitute 1 cup of shredded carrots for 1 whole carrot. Just add the quicker cooking shredded carrots with the spinach instead of with the green onions and peas.
