Confetti Tortellini

Shelf-stable tortellini is a perfect partner for sauteed veggies in this colorful and easy pasta recipe that works just as well as a main dish or side dish.

Serves: 4

What You'll Need:
  • 2 tablespoons olive oil
  • 4 garlic cloves, minced
  • 2 medium carrots, peeled and diced
  • 1 large zucchini, diced
  • 1 small onion, chopped
  • 2 large tomatoes, chopped
  • 1/4 cup water
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (8-ounce) package three-cheese tortellini
  • 1/4 cup chopped fresh basil
What To Do:
  1. In a large skillet, heat the olive oil and garlic over high heat for 1 minute, stirring occasionally. Add the carrots, zucchini, and onion; saute for 2 to 3 minutes. Stir in the tomatoes, water, salt, and pepper; cook for 8 to 10 minutes.
     
  2. Meanwhile, cook the cheese tortellini according to the package directions; drain.
     
  3. Stir the cooked tortellini and basil into the tomato mixture. Cook for 1 to 2 minutes, just until heated through, and serve.
