Skinny Mini Fettuccine

Looking for a lighter version off traditional Fettuccine Alfredo? Well you've found it with our Skinny Mini Fettuccine. Packing lots of creamy-rich flavor, this one just might pleasantly surprise you.

What You'll Need:
  • 1 cup skim milk
  • 1 tablespoon buttery spread
  • 1 (6-ounce) package low-fat processed cheese
  • 2 tablespoons grated Parmesan cheese, plus extra for sprinkling
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 8 ounces spinach fettuccine
What To Do:
  1. In a medium saucepan over low heat, combine all ingredients except fettuccine. Whisk until cheese is melted and sauce has thickened.
  2. Meanwhile, cook fettuccine according to package directions; drain and toss with sauce. Sprinkle with extra Parmesan cheese and serve immediately.

Note: For the low-fat processed cheese, our Test Kitchen used 8 wedges of Laughing Cow. However, any brands are fine.

A tasty and light broccoli side is a great go-along with this delectable pasta dish. And we like to start off with a salad, so why not try our healthy Wilted Spinach Salad?

This is a very quick, easy and good recipe. We loved it! I added some leftover rotisserie chicken from the grocer and a bit of steamed broccoli and it was fit for company. Highly recommend it.

Hey everyone, I am not a nutritionist, but I often figure out the calorie information myself for various recipes. With my calculations based upon Velveeta 2% cheese, skim milk, regular pasta (with 210 calories per 2 oz serving) and the remaining ingredients, the calorie count is 715 per serving if you follow the 2 serving suggestion. However, 4oz of pasta is well above the recommended daily amount of pasta (serving size is actually 2 ounces). If you make four servings out of this dish, the calories would be 357.5. I hope this helps someone!

Also, if you use 8 laughing cow wedges as suggested above, the calorie count it 665 for 2 servings, 332 for 4 servings.

I, too, would like the nutritional value, as well as, the calorie count. It sounds, "OOH SO GOOD", just need the rest of the story.
