Spinach Pasta and Rice

Bet you'll never guess what makes this super skillet side dish so good and good for you - why, this is probably one of Popeye's favorite ways with his favorite food...spinach!

What You'll Need:
  • 2 tablespoons olive oil
  • 1/2 cup mini ring pasta
  • 1 cup long- or whole-grain rice
  • 1 (10-ounce) package frozen chopped spinach, thawed and well drained
  • 2 (10½-ounce) cans condensed chicken broth
What To Do:
  1. In a large skillet, heat oil over medium-high heat. Add pasta and cook 1 to 2 minutes, or until golden, stirring frequently. Stir in remaining ingredients and bring to a boil.
     
  2. Reduce heat to low, cover and simmer 20 to 25 minutes, or until all liquid is absorbed and rice is tender.
     
Notes

Rings, orzo, or any type of miniature pasta can be used - even alphabet pasta for an educational as well as tasty side dish.

If someone has Diabetes, having pasta and rice together would be too many carbs. To help counteract these carbs, you would need a decent amount of protein with this dish. Sounds yummy though.

The name of this recipe is spinach "PASTA & RICE" everyone knows it is a carb dish simply by reading the name of the recipe like like "mashed potatoes" or "mac & cheese " or "spaghetti "One way to cut carbs down in this dish is leave out the pasta and add tomatoes which goes well with spinach and use brown rice

So why would you even comment on this recipe? I frequently cook for my 80 year old mother who has severe Type II diabetes, and I would never consider this recipe for her. Perhaps you should look at the soups and stews section and adapt those recipes accordingly? Or the chicken recipe section.
