State Fair Pasta

Do you love the taste of those hot sausage and pepper sandwiches that we get at fairs? I combined those flavors into a quick meal by substituting pasta for bread and adding spaghetti sauce. You can feel like you're at the fair anytime!

Serves: 6

Cooking Time: 25 min

What You'll Need:
  • 1 pound rigatoni or penne
  • 2 pounds hot Italian turkey sausage, casing removed
  • 3 large bell peppers (1 each red, green, and yellow), cut into 1-inch chunks
  • 1 large onion, chopped
  • 1 can (28 ounces) diced tomatoes
  • 1 jar (26 ounces) spaghetti sauce
  • 2 tablespoons tomato paste
  • 1/2 teaspoon black pepper
What To Do:
  1. Prepare the pasta according to the package directions; drain.

  2. Meanwhile, in a soup pot, sauté the sausage, bell peppers, and onion over medium-high heat for 6 to 8 minutes, or until the vegetables are tender and no pink remains in the sausage.

  3. Add the remaining ingredients and cook for 5 minutes, or until heated through and bubbly. Spoon over the pasta and serve.
