Busy Night Breakfast Bake

Are you thrown off by the name of this recipe? It kinda sounds like we're suggesting you have breakfast for dinner... and we are! This Busy Night Breakfast Bake is an easy and very yummy dinner option that we know you'll love as much as we do!

Serves: 6

Chilling Time: 8 hr

Cooking Time: 37 min

What You'll Need:
  • 1 pound hot or mild ground pork sausage
  • 1/2 (16-ounce) package frozen shredded hash brown potatoes (about 3 cups)
  • 1 cup (4 ounces) shredded sharp Cheddar cheese
  • 6 large eggs, beaten
  • 3/4 cup milk
  • 3/4 teaspoon dry mustard
  • 1/2 teaspoon salt
  • Dash of black pepper
What To Do:
  1. Brown sausage in a large skillet, stirring until it crumbles and is no longer pink; drain. Layer potatoes, sausage, and cheese in a greased 9- x 13-inch baking dish.
     
  2. Combine eggs and next 4 ingredients; pour over sausage mixture. Cover and chill 8 hours.
     
  3. Preheat oven to 350 degrees F. Bake, covered, 30 minutes; uncover and bake an additional 5 minutes or until set. Let stand 10 minutes before serving.
     
Notes

Breakfast is good any time of day, so why not serve it for supper? It'll be a fun change for your family. Plus this is a great make-ahead recipe-perfect for those hectic evenings. Just stick it in the oven and the breakfast's-we mean supper's-on!
