No more excuses that there's no time to cook dinner! Slow cookers have made a big comeback, and this berry-licious idea will make our everyday pork roast recipe fancy, even if we aren't expecting guests!

What You'll Need

  • 4 potatoes, peeled and cut into quarters
  • 1 (3-pound) boneless center-cut pork loin roast
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 (14-ounce) can whole-berry cranberry sauce
  • 1 cup apricot nectar
  • 1/2 cup chopped onion
  • 1/2 cup coarsely chopped dried apricots
  • 1/2 cup sugar
  • 1 teaspoon dry mustard
  • 1/4 teaspoon crushed red pepper

What to Do

  1. Place potatoes in a 3-1/2-quart (or larger) slow cooker. Lightly sprinkle roast with salt and pepper and place on top of potatoes.
     
  2. In a large bowl, combine remaining ingredients; mix well and pour over roast.
     
  3. Cover and cook on HIGH setting for 3 to 3-1/2 hours or on LOW setting for 6 to 6-1/2 hours.
     
  4. Remove roast to a cutting board and slice. Serve with potatoes and sauce.

I like the sound of this recipe. I think I might mix the sauce the day before and maybe even cut and soak the potatoes in water the day before, then put it all in the crockpot on Christmas morning

Fantastic recipe.

I tweaked the recipe to include rhubarb with half the cranberry sauce. It's was divine!

My family loved this. Pork was so tender. I made it as is with just a tad more red pepper for an extra kick... I didn't think it was too sweet. A good company dish.

Family really liked it. My sister made it and her family also liked it. It was a little sweet for me. So next time will omit the sugar. Also like what lisaj21 said about swapping out the cranberry for pineapple and raisins for apricots. Omitting sugar. Will try that next time.

I tried this recipe and it was very tasty; the kids loved it. I even passed this recipe on to my mother. I've also swapped out cranberry for pineapple chunks, w/the juice for the liquid and omitted the sugar and used raisins instead of apricots. Easy and simple meal.

I tried this dish this week and it was "oh sooo good." I substituted some honey for the sugar and it gave it a nice richness. I also thickened the sauce a little with corn starch and water so my family could dunk their bread. They loved it and so will you!!!

Have some bbq'd ham/bone left over from Christmas dinner. Maybe I could make up some potatoes and add to the meat. I also made cranberry relish and have plenty of that. How would that be? and maybe some raisins? any suggestions?
