Pineapple Ham Kebabs

Why not try grilling ham, peppers, and pineapple on skewers for a whole new quick dinner taste? (I bet you'll try it again and again, even when you're not in a hurry!)

Serves: 4

Cooking Time: 15 min

Ingredients
  • 6 to 8 wooden or metal skewers
  • 1 pound ham steak, cut into 1-inch cubes
  • 2 large red or green bell peppers, cut into 1-inch squares
  • 1 can (20 ounces) pineapple chunks, drained and 2/3 cup juice reserved
  • 1/2 cup firmly packed brown sugar
Instructions
  1. Soak wooden skewers in water for 15 to 20 minutes. Then, on each skewer, alternately thread chunks of ham, pineapple, and bell pepper. Place the skewers in a 9" x 13" baking dish.

  2. In a medium-sized glass bowl, combine the reserved pineapple juice and the brown sugar. Mix until the sugar dissolves. If the sugar does not readily dissolve, you can place the glass bowl in the microwave and heat for 30 to 40 seconds on high power, then mix it again.

  3. Pour the mixture over the kebabs, cover, and refrigerate for about 30 minutes, turning occasionally.

  4. Preheat the grill to medium-high heat. Grill the kebabs for 9 to 12 minutes, basting with the excess marinade, and turning frequently. Remove from the grill when the vegetables are cooked and the edges are crispy. Discard any excess marinade.
