Some of us might think that oven bags are a modern invention, but foil cooking goes back a long time. Our recipe for Roast Pork in a Bag is a simple way to capture lots of juicy flavor and cook it into our foods.
What You'll Need:
- 1 (2½ pounds) boneless pork loin sirloin roast
- 2/3 cup packed light brown sugar
- 1/4 cup applesauce
- 1 1/2 teaspoons ground ginger
- 1 teaspoon cornstarch
- 2 teaspoons water
- 1 oven bag (see Note)
What To Do:
Preheat oven to 325 degrees F.
Place roast in oven bag then place bag in a 9- x 13-inch baking dish.
In a small bowl, combine brown sugar, applesauce, and ginger; mix well.
Spoon over roast; seal bag then cut six 1-inch slits in top. Bake 55 to 60 minutes, or until little pink remains for medium-well, or no pink remains for well-done.
In a small bowl, combine cornstarch and water; mix well.
In a medium saucepan, combine pan drippings from bag and cornstarch mixture. Cook over high heat 2 to 3 minutes, or until sauce begins to thicken, stirring constantly.
Cut roast into thin slices and serve with sauce spooned over top.
Oven bags can be found in the paper goods/food wraps area of the supermarket near the aluminum foil and plastic wrap.
