Anytime Fried Rice

You don't have to be serving up a complete Chinese dinner to serve fried rice. And with no egg and minimal oil, Anytime Fried Rice is a 1-2-3 throw-together that's quick and ready to go in no time.

What You'll Need:
  • 2 tablespoons vegetable oil
  • 3 cups cold cooked white rice, rinsed
  • 1 (10-ounce) package frozen peas, thawed
  • 3 scallions, sliced
  • 1/3 cup light soy sauce
  • 1/4 cup chicken broth
  • 1/4 teaspoon black pepper
What To Do:
  1. In a large skillet over medium-high heat, heat oil. Add rice and stir-fry 10 minutes.
     
  2. Add peas and scallions and continue to stir-fry 1 minute. Add remaining ingredients; mix well.
     
  3. Reduce heat to medium-low and cook 2 to 3 minutes, or until thoroughly mixed and heated through.
Notes
  • Using moist cold rice helps to give your Anytime Fried Rice that authentic crisp fried rice texture and flavor.
     
  • For a special treat, add a scrambled egg to the finished rice dish.

I made this very good and I later use Fried ground beef and mixed veg. like frozen carrots, broccoli, and cauliflower mix very good

This was easy and very good. Could easily add more vegetables and cooked chicken to turn into a main course.

Jasmine long-grain rice is a must. The worst thing is to have fried rice clumped together, not very appealing to the eyes. :-(

It is known that when making any fried rice you should make it ahead of time and then refrigerate it till cold.

Huh? You make it with cold rice, you don't have to refrigerate it.

This was a quick and tasty fried rice. I prefer it over the Chinese restaurant version,especially since I know exactly what's in it! I didn't have enough soy sauce and ended up doing half soy sauce, half teriyaki sauce. I fried up an egg to add to it, and used a bag of frozen mixed vegetables. My husband asked when I was going to make it again, so it ranks high for me.

yumm, love the addition of mixed veggies. think I will try it with shrimp or chicken....

If I were to add eggs like other viewers, do I fry them in the pan before I add the rice?

Having this for supper this evening, but adding chicken and scrambled eggs.

I think they mean to use rice that's been rinsed before it's cooked.

the fried rice would tasted so much better if you add cooked left over pork or chicken or shrimp and add some pieces of scrambled egg believe me the taste is so much better. and you will love it. it's great as a meal or a side dish

Ok, this sounds good ... but I never wash cooked rice and I add scrambled egg. Most importantly, to make it a full meal, I add leftover chicken or steak cut into cubes. YUM

Curious on why the cooked white rice needs to be "rinsed"? (Doesn't that make it splatter more when stir-frying it in oil?)

Excellent, I also added the eggs like they do in restaurants kinda fried then added other ingredients. I used frozen carrots instead of peas and I added shrimp. I boiled the gulf shrimp just a bit first. This was a whole meal and we loved it

I like to use Garlic Salt instead of powder, I also add 3 eggs to the rice at the same time as I add Soy Sauce! It is delicious!

I made this exactly the way it was written, xcept I used yellow rice. It was "awesome".

The yellow rice sounds really good!
