Anytime Potatoes

Perfect for brunch or dinner, Anytime Potatoes are a popular, easy go-along for any party, anytime.

What You'll Need:
  • 1/2 cup (1 stick) butter, melted
  • 1 (10 ¾-ounce) can cream of chicken or mushroom soup
  • 1 pint (16 ounces) sour cream
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 2 pounds frozen hash brown potato cubes, thawed
  • 1/4 cup dry bread crumbs
  • 1/2 cup grated Parmesan cheese
What To Do:
  1. Preheat oven to 350 degrees F. Coat a 9- x 13-inch baking dish with cooking spray.
     
  2. Place melted butter in a large bowl and add remaining ingredients except potatoes, bread crumbs, and Parmesan; mix well.
     
  3. Add potatoes and stir until evenly coated. Press potato mixture into prepared baking dish. Sprinkle with bread crumbs and cheese.
     
  4. Bake 1-1/2 hours, or until hot and bubbly.

These potatoes were a hit @ work! Everyone wants recipe. Made it twice. First time I didn't have anything but 4-cheese and it was delicious. Second time I made it per recipe (with Parmesan); also wonderful; however, my hubbie doesn't like parmesan, so he prefers first one. I made my own bread crumbs by toasting 2 slices of bread real brown, and then letting them sit in toaster until very hard; crushed them by hand and mixed with cheese, placed over top and baked per directions.......not dry @ all! Next time gonna add some hamburger meat and who knows what next!

This recipe works much better if you omit the bread crumbs. (The bread crumbs have a tendency to dry this recipe up) Use 1 and half sticks of meted butter or margarine and bake for 45 minutes to 1 hour. Instead of grating cheese use an 8 ounce bag of mild or sharp shredded cheddar cheese.

I baked the recipe for 1 1/2 hrs. it was a way to dry. Next time I will try 30 - 40 minutes.

I'll be glad to try this recipe over the holidays, then let you know what everyone thinks. julie
