Cheddar Potato Casserole

Need an easy side dish that requires very little prep? Try out our Cheddar Potato Casserole. It's so simple to put together and it bakes up to a crisp golden brown. These cheesy, creamy potatoes are sure to be a hit at your dinner table!

What You'll Need:
  • 3 1/2 cups water
  • 1/2 cup (1 stick) butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 1/2 cups instant potato flakes
  • 1 small onion, finely chopped
  • 1 1/2 cups (6 ounces) shredded sharp Cheddar cheese
  • 1 cup (1/2-pint) heavy cream
What To Do:
  1. Preheat oven to 350 degree F. Coat an 8-inch square baking dish with cooking spray, set aside.
     
  2. In a large saucepan, bring water, butter, salt, and pepper to a boil over high heat. Remove saucepan from heat and stir in potato flakes and onion; mix well.
     
  3. Spoon potato mixture into prepared baking dish. Sprinkle with cheese and top with cream.
     
  4. Bake 35 to 40 minutes, or until heated through and the edges are golden.

 

Note

For all of you who are skeptical about using instant potato flakes, go ahead and give 'em a try in this recipe. You won't be disappointed.

If you add in some garlic powder, chives, and bacon bits it's like a baked potato casserole. Super tasty with sour cream on top as well!

Likingit2 You DO NOT LOSE FLAVOR by using Smart Balance, low-fat cheddar cheese and 2% milk. Wonderful and quick!!!

Likingit2 I use Smart Balance,not butter, skim milk cheese and cut down on water and use 2% milk. You do not use flavor and it is not so rich. Tastes excellent and easy to prepare!!!

Can sour cream be used instead of heavy cream?

Fat content: Butter - 92 GR, Cream - 44 GR, Cheese - 56 GR = 192/6 servings = 32 GR of fat, probably tastes pretty good but definitely not a good choice for anyone!

Am I in a weight loss recipe club?? I thought this was a recipe site for good tasting recipes people will actually eat

Sounds good but it seems like most of these receipes have a lot of butter, cheese, eggs, sugar & fattening ingredients. I know you can substitute but geeze!!!

If you belong to weight watchers you can figure the nutritional value by using their recipe builder and seriously - it does not take long - you can do this with any recipe and it does not take long. eliminate those that you know you should avoid and use the builder for the others - soon you will know for yourself - god mental exercise
