Cheddar Potato Latkes

Ingredients
  • 2 cups refrigerated shredded hash browns
  • 1/3 cup egg substitute
  • 1/3 cup (about 1-1/2 ounces) shredded reduced-fat sharp Cheddar cheese
  • 1/4 cup (about 2) chopped scallions
  • 2 tablespoons reduced-fat sour cream
  • 1/4 teaspoon salt
  • Cooking spray
  • 1 teaspoon canola oil
Instructions
  1. Combine first 6 ingredients in a bowl, and stir well.
     
  2. Heat a large nonstick skillet over medium heat. Coat pan with cooking spray. Add oil, and swirl to coat pan.
     
  3. Drop potato mixture evenly into hot oil to make 6 latkes. Cook 5 to 6 minutes on each side or until golden; spray tops with cooking spray. Carefully turn latkes over; cook 5 to 6 minutes or until bottoms are golden. Serve warm.

Notes
