Garlicky Cheesy Smashed Potatoes

Thanks to the garlic cheese and Yukon golds, these mashed potatoes are a smashing big hit with my crew! And they're ready in record time?11 minutes!

What You'll Need:
  • 1 pound Yukon gold potatoes
  • 1/4 cup light garlic-and-herbs spreadable cheese
  • 1/2 cup fat-free milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
What To Do:
  1. Scrub potatoes; prick several times with a small fork or knife. Place on a microwave-safe platter. Microwave at HIGH 6 minutes or until tender.

  2. Mash potatoes with a potato masher. Add cheese and remaining ingredients; mash to desired consistency.
