Harvest Pudding

At holiday time, there's nothing better than revisiting the tastes of Mama's cooking. This sweet potato pudding is known as tsimmes and other names. Whatever it's called, it's worth trying this rich, flavorful side dish packed with potatoes, vegetables and fruit.

Serves: 4

What You'll Need:
  • 1 cup peeled and grated sweet potato (about 1 medium or 1/2 pound)
  • 1 cup peeled and grated carrot (about 3 carrots)
  • 1 cup peeled, cored, and grated apple (about 1 large apple)
  • 1/2 cup sugar
  • 1/2 cup raisins
  • 1/2 cup cracker crumbs or matzo meal
  • 1/2 cup chopped prunes
  • 2 tablespoons lemon juice
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) butter or margarine, melted
What To Do:
  1. Preheat oven to 350 degree F. Coat an 8" x 4" loaf pan with cooking spray.
     
  2. In a large bowl, combine all ingredients; mix well then pour into prepared pan.
     
  3. Bake 45 minutes, or until heated through. Serve warm as a side dish.
Notes

A food processor makes grating a snap. Also, your loaf pan doesn't have to be exactly this size; any one close to that size will do.
