Loaded Baked Potato Casserole

We hope you've left a little extra room for this one! You're going to be going back for thirds with this Loaded Baked Potato Casserole.

Serves: 8

Cooking Time: 40 min

What You'll Need:
  • 1 (32-ounce) package frozen seasoned potato wedges
  • 8 bacon slices, crisply cooked and crumbled
  • 1 red bell pepper, chopped
  • 1 cup chopped scallions (about 10 medium)
  • 1 (10-3/4-ounce) can Cheddar cheese soup
  • 1/2 cup sour cream
What To Do:
  1. Preheat oven to 400 degrees F. Coat a 9- x 13-inch baking dish with cooking spray. Arrange potato wedges in baking dish.
  2. Bake 20 minutes, or until potatoes are thawed and beginning to brown. Top with half each of bacon, bell pepper, and scallion. Spoon cheese soup on top. Sprinkle with remaining bacon and bell pepper.
  3. Bake 20 to 30 minutes, or until potatoes are tender and casserole is heated through. Top with dollops of sour cream and sprinkle with remaining scallions.
