Maple Grilled Sweet Potatoes

Sweet potatoes add a special touch to any meal, so why not grill them along with everything else?

What You'll Need

  • 1/2 cup maple syrup
  • 1/2 cup pineapple juice
  • 1/4 cup honey
  • 4 large sweet potatoes, peeled and cut into 1/2-inch thick slices

What to Do

  1. In a large saucepan, combine the maple syrup, pineapple juice, and honey. Add the sweet potato slices and bring the mixture to a boil over medium heat on the stovetop. Reduce the heat to low and simmer for 12 to 15 minutes, or until the potatoes are just fork tender.

  2. Preheat the grill to medium-high heat. Remove the potatoes to the grill for 4 to 6 minutes, until browned, turning frequently and basting with the remaining liquid.

Notes

You can cook these potatoes and keep them in the refrigerator, covered, for up to 2 days before you plan to grill them. Then follow the directions for grilling as above.
