Mom's Famous Potato Salad

Donna Hayes of SimplyDeLishDish.com had a favorite Easter tradition in her house: ham and potato salad. Not just any potato salad, but her mom's Famous Potato Salad. This homestyle dish is one of the best potato salad recipes out there, with plenty of bacon and hard-boiled eggs!

What You'll Need

  • 1 pound bacon, cooked and coarse crumbled
  • 6 medium red potatoes, cooked just until tender, drained, cooled, chopped
  • 1 large red onion, diced fine
  • 7 hard-boiled eggs, peeled and chopped
  • 1/3 cup dill pickle relish (or chopped dill pickles)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon season salt
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup mayonnaise
  • 1 1/4 tablespoon mustard
  • sweet paprika

What to Do

  1. Cook bacon until crisp; set aside.
     
  2. Cook potatoes in salted (1 tsp.) water, whole with skins on, until tender (about 20 minutes). Drain and set aside.
     
  3. In large bowl, mix onion, pickles, seasonings, mayonnaise, and mustard.
     
  4. Peel and chop potatoes; add to mix.
     
  5. Add chopped eggs and crumbled bacon.
     
  6. Still well, but gently, until potatoes are fully covered with mayonnaise mixture. Add additional mayonnaise if needed.
     
  7. Adjust seasoning to taste. Remember: seasonings will be more prominent once the salad sits, so don't overdo it.
     
  8. Cover and refrigerate until ready to serve.
     
  9. To serve, gently scoop into serving bowl and sprinkle with sweet paprika.

Notes

  • Lighten it up: Use turkey bacon and light or fat-free mayonnaise. Yukon potatoes have less starch.
     
  • Dress it up: Right before sprinkling with paprika, arrange thin sliced egg wedges in a pin-wheel on top.
     
  • Twist it up: Add a bit of crunch. Dice 2 large stalks of celery and add to the mayonnaise mixture. Leave the skins on the potatoes for a bit of color.
     
  • Helpful hint: Mayonnaise is one of those foods that must be kept cold. Potato salad should be the last thing on the table and the first thing put away.
