Orchard Sweet Potato Bake

This is no ordinary sweet potato casserole. The addition of some Granny Smiths or Cortlands changes this everyday taste into something "apple-luscious"!

Serves: 6

Preparation Time: 7 min

Cooking Time: 1 hr 30 min

What You'll Need:
  • 3/4 cup orange juice
  • 3/4 cup honey
  • 1/4 cup (1/2 stick) butter, melted
  • 1 teaspoon salt
  • 2 cans (29 ounces each) sweet potatoes or yams, drained
  • 2 cans (14-1/2 ounces each) sliced carrots, drained
  • 3 golden delicious apples, peeled, cored and cut into 1-inch chunks
  • 1 package (12 ounces) pitted prunes
What To Do:
  1. Preheat the oven to 350 degrees.

  2. In a large bowl, combine the orange juice, honey, butter, and salt; mix well. Add the remaining ingredients and toss until well coated.

  3. Spoon into a 2-quart casserole dish that has been coated with cooking spray and bake for 1-1/2 to 2 hours, or until tender, stirring occasionally.

Notes

Can also be made with fresh sweet potatoes and carrots. Just peel, cut into chunks and boil until tender, then proceed as above.
