Rice Primavera

No, Primavera doesn't have to be pasta. It's a super hero-maker this way...wait'll you see!

Serves: 6

Cooking Time: 10 min

What You'll Need:
  • 2 teaspoons olive oil
  • 1 garlic clove, minced
  • 2 cups broccoli florets
  • 1 cup sliced zucchini (about of a medium-sized zucchini)
  • 1 cup sliced mushrooms (about 2-1/2 ounces)
  • 1 tomato, seeded and chopped
  • 1/4 cup chopped fresh parsley
  • 1/3 cup mayonnaise
  • 1/2 cup milk
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon pepper
  • 3 cups cooked rice
What To Do:
  1. In a large skillet, heat the oil over medium-high heat; saute the garlic, then add the broccoli, zucchini, and mushrooms and cook until almost tender-crisp, 3 to 5 minutes. Add the tomato and parsley and cook for 1 minute more. Remove the vegetables and set aside.
     
  2. Add the mayonnaise to the same skillet; stir in the milk, cheese, and pepper. Cook over medium heat, stirring until smooth. Add the rice; toss to coat.
     
  3. Return the cooked vegetables to the skillet and heat through. Serve immediately.
